Cheesy mash
Comfort food like no other!
Serves 6
2 whole heads of garlic
15 ml (1 t) olive oil
6 - 8 large potatoes, peeled and diced
180 ml (3/4 cup) warm milk
45 ml (3 T) butter
Salt and pepper to taste
30 – 45 ml (2 – 3 T) Melrose Cheese Spread extra melted butter, to finish
Preheat the oven to 180 ºC. Slice the garlic bulbs in half and arrange on a double layer of foil. Drizzle with the oil and wrap tightly in the foil. Put on a baking tray and roast for 30 minutes. Remove from the oven, unwrap and leave to cool.
While the garlic is roasting, cook the potatoes in a saucepan of boiling water until tender. Drain and add the warm milk and butter. Mash well and add salt.
Squeeze the roasted garlic out of the skins and add to the mashed potatoes with the Melrose Cheese Spread. Mash well. Spoon into a serving dish and finish with a drizzle of melted butter.
